Sift together flour, sugar, baking powder, salt, and cinnamon.
Combine milk, yolks, pumpkin, and butter.
Add to dry ingredients, stirring just until flour is moistened. Fold in egg whites.

COWBOY COOKIES
Combine in large mixing bowl:
1 1/3 c quick oats
1 1/3 c flour
1/2 c brown sugar
1/2 c white sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c chopped pecans (opt)
Mix together and add to other ingredients:
1 stick melted butter
1 egg slightly beaten
1 tsp vanilla
1/4 c milk
Add and mix:
1 c chocolate chips or raisins
Shape into 2 Tbs balls and place on a parchment-lined sheet.
Bake at 350 for 8-11 min. Until edges are lightly browned. Cool 5 minutes on baking sheet. Remove to racks to finish cooling.
Makes about 2 dozen cookies
SHRIMP BOIL
INGREDIENTS:
Serves 12:
1 shrimp boil package (Zatarain’s or use ingredients below)
1 1/2 lbs very small red/ gold potatoes
2 lbs carrots
1 red onion (opt) cut in half then about 1/4ths
6 ears corn (frozen in slices works great)
2 whole turkey kielbasa, sliced
1 ½ lbs shrimp (thawed, peeled, deveined, raw)
1/2 stick butter

Tortilla chips (scoops are great!)
Refried black beans (refried stick to the chips better than regular beans)
Shredded chicken or pork
1 jalapeno
Corn kernels
Shredded cheese

1 Tbs fresh lime juice (1 lime)

Diced tomatoes

DIRECTIONS:
Preheat oven to 500.
Spray jelly roll pan so cheese comes off easier during cleanup.
Arrange chips on pan. Cover with beans, meat, jalapeno, corn, and cheese.
Bake until cheese is melted, and chips are lightly browned, about 5-10 min.
Meanwhile, stir together sour cream and lime juice in small bowl.
Remove nachos from oven; sprinkle with avocado, tomato, and cilantro. Drizzle with sour cream mixture.
Caramel Popcorn
16 c popped popcorn (about ½ c kernals. Measure and sift through seeds)
1 c brown sugar
¼ c Karo syrup
½ c butter
½ tsp baking soda
1 tsp vanilla
INSTRUCTIONS:
Place brown sugar, karo syrup, and chunked butter in 2 qt glass bowl.
Microwave 30 seconds. Stir
Microwave 2 min. Stir
Microwave 2 min. Stir
Add baking soda and vanilla, stir until foamy.
Pour over popcorn and mix with rubber scraper well.
Place on foil-lined jelly roll pan*
Bake at 300 for 7 min. Stir. Bake 7 min more. Stir, bake any extra time if needed.
Spread on wax paper to cool

After popcorn is coated, pour in bag. Fold bag over.
Place in microwave one minute then shake.
Repeat 1 min and shake.
Microwave 30 seconds and shake.

3 eggs
1 cup oil (half applesauce)
1 1/2 cups sugar
2 tsp vanilla
2 cups grated zucchini
1 cup chopped nuts (optional)
Whisk together dry ingredients in a large mixing bowl.
In another bowl, whisk eggs, oil, sugar, and vanilla.
Add to dry ingredients with zucchini and nuts. Stir till well combined.
Pour in greased 9x13" pan.
Bake at 350° for about 40 minutes or until toothpick comes out clean.
Cool completely and frost with cream cheese frosting.
For frosting: Beat cream cheese and butter in a mixing bowl till smooth. Beat in powdered sugar and vanilla. I don't usually need to add any milk, but you might. Add as much as you need to get a creamy, spreadable consistency.

TERIYAKI SALMON
4 salmon filets skinless
1 clove garlic minced
½ teaspoon ginger minced
¼ cup low sodium soy sauce
⅛ cup water
2-3 TBS brown sugar depending on how sweet you like it
1 TBS rice vinegar
1 tsp sesame oil
1 tsp cornstarch
1 TBS cold water
green onions for garnish if desired
sesame seeds for garnish if desired
INSTRUCTIONS
Mix garlic, ginger, soy sauce, 1/8 cup water, brown sugar, rice vinegar and sesame oil in a small bowl (pyrex measuring cup).
Add half of the marinade to a ziplock bag (or 9x13 pan) and the other half to a small saucepan and set aside.
Place salmon filets in the ziplock bag (or pan) and marinate for 30 minutes.
Bake at 400 for about 20-25 min covered with foil, still in the marinade.
Or can fry in a little oil in pan, on stove.
Meanwhile heat the reserved marinade in the saucepan and bring to a simmer.
Place cornstarch and 1 Tbs cold water in a small bowl and whisk to combine.
Slowly whisk in the cornstarch mixture to the marinade and simmer until thickened.
Serve immediately with green onions, sesame seed, and the teriyaki sauce drizzled on top.
