Christmas Salad

 Christmas Salad

Romaine lettuce or mixture

Avocado

Pomegranate seeds

Mandarine oranges

Grapefruit


Dressing:

½ c. + 2 Tbs sugar

1 tsp salt

1 tsp dry mustard

1 tsp paprika

⅓ c apple cider vinegar (not quite full)

1 Tbs celery seed

1 c. oil


Directions:

Assemble salad ingredients.  For dressing, combine all but oil in blender.  Pour oil in slowly through the top hole while blender is going.  Blend about 1 min.

To store dressing:  place a quarter onion in with the dressing, but take out when serving.

Heather's Mint Fudge

Heather’s Mint Fudge


Mint Layer

2 ¼ c sugar

6 oz evaporated milk

4 Tbs butter

1 pkg (11.5 oz) white chips

⅓ c heaped marshmallow cream

¼ tsp peppermint extract or oil


Fudge Layer

2 ¼ c sugar

6 oz evaporated milk

4 Tbs butter

1 pkg semi-sweet chocolate chips

⅓ c heaped marshmallow cream



Directions:

  1. Layer 2 sheets wax paper in 9 x 13 pan, oil.

  2. Make mint layer:  

    1. In medium pot add sugar, milk, and butter.  Bring to a boil over medium heat.  Reduce to low, stir constantly 5 min. 

    2. Remove from heat, stir in white chips, marshmallow cream, and peppermint.  Mix well. 

    3. Pour into 9x13.

  3. Make fudge layer the same way.

  4. Pour over mint layer.

  5. Chill in refrigerator at least 3 hours.

Hot Citrus Drink

 1 c sugar

2 qt water

2 c orange juice

3/4 c lemon juice

1 tsp vanilla

1 tsp almond extract

Bethlehem Dinner

 Fish (sticks)

Veggie plate, olives

Fruit plate

Flat bread, havarti cheese, crackers, sausage roll

Nuts, figs, dates

Swedish Meatballs

 

Grandma Johnson's Swedish Meatballs

1 lb ground beef
1/3 lb sausage
2 slices bread, crusts removed, soaked in the milk (below)
1/4 c canned milk (or regular is fine)
1 egg
1/2 onion chopped fine
2 t salt (little less)
1/2 t sage
1 t pepper (little less)
parsley

Mix all ingredients together, shape into meatballs (1/8 c size) 

Place on cookie sheets a little apart. Bake at 425 degrees for 14 minutes. Flip meatballs half way through.

Prior to serving, heat them in a pan with some beef broth on the bottom.

Cheese Ball

8 oz cream cheese
1 c sharp cheddar cheese
2 green onions, chopped fine
1/2 tsp Worcestershire sauce 
1/8 tsp onion powder 
1/8 tsp garlic powder 
parsley
1/3 c chopped fine pecans

Whip cream cheese until smooth, add cheese, onions, and rest.  Whip and form into a ball.  Roll in pecans.

Swedish Christmas Rice

3 c cooked rice, white or brown
1/2 can evaporated milk
1/4 c sugar
1 Tbs corn starch
1 c milk

opt:  almonds

Place together in a slow cooker.  Cook on low for a couple hours.  Serve with milk and cinnamon/sugar.

Or cook on stove (in double boiler)
