I got this recipe from my friend Carrie, and slightly adapted it.
6 Tbs butter (3 Tbs butter, 3 T oil)
1 minced onion
3 carrots, minced
1 Tbs curry powder
1 1/2 tsp salt
1 1/2 tsp sugar
1/4 tsp ground ginger
1/4 c + 2 Tbs flour
1 1/2 c chicken broth
2 c coconut milk- light (can use regular milk if you have to)
2 c. cooked chicken chunks
1 Tbs lemon juice
Melt butter over low-medium heat. Saute onions and carrots. Add curry powder and seasonings. Stir. Add flour, stir, then chicken broth and coconut milk. Bring to a boil, stirring constantly and boil for a few minutes. Add chicken and lemon juice.
Serve over rice- about 2 cups raw
