Salmon Bowls

 

Salmon Bowls

Ingredients:

  • 12 oz salmon

  • ⅓ c soy sauce

  • ⅓ c honey

  • 4 cloves minced garlic

  • 2 tsp minced ginger

  • 1 tsp onion powder

  • ½ tsp red pepper flakes

  • Sesame seeds

  • Rice, cooked

  • Cucumbers, quartered

  • Avocado

  • Green onion

  • Spicy mayo 

  • edamame


Directions:

  • 1. Cube salmon (without the skin), and mix in a bowl with ⅓ cup soy sauce, ⅓ cup honey, 4 cloves minced garlic, 2 tsp minced ginger, 1 tsp onion powder, and ½ teaspoon red pepper flakes 

  • 2. Heat a skillet to medium-high heat and add your salmon and sauce. Cook for 5 minutes then flip and cook for another 5 mins. Add sesame seeds 

  • 3. Build your own with whatever toppings you want.

Chicken Taco Bowls

Chicken Taco Bowls

INGREDIENTS:
1 lb raw chicken (original recipe calls for 1 1/2 lbs)
1-16 oz jar salsa
2 cloves garlic, minced
1 15 oz can black beans, drained
1/4 c water
1/2 lb frozen corn 
1 Tbs chili powder
1/2 Tbs cumin
1/2 tsp oregano
1/4 tsp cayenne pepper
black pepper
2 c uncooked rice
sour cream (Yes! so good with sour cream!)
shredded cheese
green onions/cilantro

DIRECTIONS:
Combine chicken through black pepper in crockpot.  Stir.  Cook on low 8 hours or high 4 hours.

When done, shred chicken in crock pot.  Add salt if needed

To build bowls place rice at bottom, top with chicken mixture, cheese, sour cream and anything else!

Creamy Chicken Rigatoni, Instant Pot

 Ingredients 

  • 1 tablespoon olive oil
  • 1 pound chicken cut into bite size pieces
  • salt, pepper, garlic powder to taste,
  • 24 oz marinara sauce keep jar to fill half way with water
  • 1 bell peppers, diced
  • 1 yellow onion, diced
  • 1/4 teaspoon red pepper flakes, optional
  • 1/2 pound rigatoni pasta
  • 3/4 cup half and half or heavy cream
  • 1/2 cup parmesan cheese
  • 2-3 tablespoons fresh basil (or just sprinkle on some dried)

Instructions

  1. Heat Instant Pot to Saute. Add olive oil. Once pot says HOT, add chicken. Sprinkle with salt, pepper, garlic powder, and then let cook till brown on one side, about 2-3 minutes. Stir and make sure no chicken pieces are sticking to the bottom. Hit cancel.
  2. Add peppers and onions on top of the chicken. Add red pepper flakes and pasta. Add marinara sauce and then fill jar halfway and add water.   Push any noodles that are above the sauce into it.

  3. Put lid on the Instant Pot and turn to sealed. Use the manual function and change the timer to 5 minutes. Let cook. Once finished, do a quick release then add the half and half and parmesan cheese. Stir to distribute. Add additional seasonings to taste. Add basil and serve.

Jasta: Italian Pasta Salad

        JANE'S FAVORITE PASTA
  • (1) 16 ounce package of rotini pasta (multi-colored)
  • 2 cups cherry tomatoes halved
  • 1 cucumber, cut and quartered
  • 4 oz mozzarella cheese cubed
  • 3 oz sliced pepperoni cut in fourths 
  • 1 large green bell pepper diced
  • (?)(Red onion, chopped fine
  • 1 can of black olives 10 oz, drained
  • 8 oz Italian dressing
  • 6 oz shredded Parmesan cheese (opt)

  1. Bring a large of of water to a boil.
  2. Add pasta and cook until al dente. You want your pasta firm.
  3. Drain, and rinse with cold water. Set aside.
  4. In a large bowl, combine the pasta with tomatoes, mozzarella cheese, pepperoni, green pepper, and black olives.
  5. Pour the Italian dressing over the top. Add in the Parmesan cheese and stir to coat.
  6. Let sit in the refrigerator for at least one hour for the flavors to come together.

Robyn's Meatballs

Robyn’s Meatballs


1 bag frozen, Italian beef meatballs (about 26 oz)


Sauce:
3/4 brown sugar
3/4c apple cider vinegar, or white
3/4c barbeque sauce
3 tsp Worcestershire sauce
3 tsp mustard


1 ½ c. uncooked rice, cooked

Mix together sauce ingredients in crock pot.  Add meatballs and cook on high 2+ hours.  Serve over rice.
