Ingredients
- 1 cup quick-cooking oats
- 1 cup buttermilk (fine if you make with lemon juice/milk)
- 1 egg, beaten
- 1/2 cup packed brown sugar (these are sweet, can do a little less)
- 1/4 cup vegetable oil
- 1 cup all-purpose flour or wheat
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions
- 1. In a bowl, soak oats in buttermilk for about 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° until muffins test done, 16-18 minutes. Cool in pan 5 minutes before removing to a wire rack.
